So, I officially moved to Portland in January of this year, but I did come to visit in the summer of 2015 (and fall) when I was looking for work.
When I was on the hunt for a job there were obviously things I did to fill in the time I didn’t spend chasing down employment leads.

But. I did have a chance in the summer to cook an all PNW meal at our little apartment. This was the first meal I cooked in Portland.
Everything we either sourced from local stores, the PSU farmers market or picked ourselves.
Course 1: Salad of new potatoes, blanched fiddlehead ferns and smoked salmon belly from PDX Fish Market
Course 2: super sweet Manila clams from PDX Fish market with homemade “northwest” XO sauce made with smoked oysters, applewood smoked bacon, elephant garlic, chillies, fresh morels and oil
Course 3 Roasted halibut marinated in a purée of smoked oysters from Portland Fish Market with charred endive and buerre blanc
Course 4: Slice of rib eye, daikon poached in bouillon, morel sauce.
Course 5: We hunted and killed these strawberries ourselves on Sauvie Island. Graham cracker pressed biscuit base and whipped cream
