So I saw these once on No Reservations, you know the show where Anthony Bourdain gets drunk, eats pork and generally reflects on anything and everything. Needless to say the show is magical. In the show he eats augmented* spring onions that have been cooked over coals and eaten with an aioli. Is there no simpler thing in life than RAW -> FIRE -> EAT? I love maths.

Anyway somehow these came up in conversation with a friend from Mexico (OH HEY ANDREA) who informed me that she has them with lime salt, Fuck Aioli.
So this is literally the easiest thing to make and enjoy, we usually have these before a taco night.
Lots of spring onions, the bigger the better. Trim the roots and chop off the top part of the greens.
A few limes juiced and zested.
Step 1: FIRE. Start up a charcoal grill. Don’t have a charcoal grill? Get your BBQ as hot as possible.
Step 2: Put the onions on fire. Step 3: Allow them to char a little. They should be soft in the middle and a little blackened on the outside.
Step 4: For the lime salt simply rub lime zest and sea salt together.
Step 5: Serve with fresh lime and lime salt. VAMANOS!
*Augmented: They build the soil up around the onions so the white section is incredibly long = more onion to eat. Those monsters.
