  1. Pork belly, thin layer of pate (duck), picked carrot, coriander, no plum sauce. Extra EXtra EXTRA crackle. With some crackle on the side.

  2. JUICY roast pork, crackle, pork pate, generous serving of veg and herbs: pickled carrots, cucumber, spring onion, coriander and chilli. If I ws making it for myself I’d add Vietnamese mint and normal mint too (adds freshness to counter the pork) but not often available in bakeries.Soy chilli sauce OR whatever the store’s version is of their nouc nam. Definitely no butter. No gravy. No plum sauce. I LOVE crackle… But extra crackle served on the side.
