Borscht is unbelievably simple to make and is very very good for you.
2 Large Beetroot
2 large Potatoes
2 stock cubes (vegetable of chicken)
large tsp of coriander powder
large tsp of all spice.
Unhappy Cream (Sour Cream)
1. Grate the beetroot and potato and add to a large pot. Add finely diced leeks, stock cubs and cover with cold water.
2. Simmer on a medium heat for two hours.
3. Add the Coriander and all spice, and stir well.
4. Serve with the Unhappy Cream and rustic Rye Bread.
