If you live in Melbourne you will know how freakin freezing and wet out winter has been and over the last two weeks the sun has returned from its northern hemisphere holidays. As such the days have been so deliciously warm and fresh. The only way to celebrate it is will delicious cocktails, great food and great friends.
My old school buddy came round the other night for a few bevvies and some homemade burritos and we decided to make a sneaky cocktail before heading out. I’ve always loved Aloe Vera water and have seen it in cocktails on handful of occasions. It is the strangest, you might say ‘acquired taste’ but is also quite sweet which means making a mojito only requires 3 or 4 ingredients.
1. Blend a cup of ice with 50ml of bacardi and 200ml of strained Aloe Vera juice (reserve pithy bits for late)
2. Add 4-5 sprigs of mint finely sliced, and the strained pith. Stir well.
3. Serve immediately.
