Do you have a terrible phobia of frozen fish fingers? Good, so its just not me. I have terrible memories of those charred on the outside frozen on the inside Cod Cakes that i swear were made from cat food ( FYI cat food is actually pretty terrible). Its so easy to make your own delectable Fish Fingers from your favourite fish. A friend recently introduced me to my new best friend; Sirena infused tuna, which imparts the most amazing subtle flavour into anything you create. Seriously these are the best fish fingers you will ever eat. Even my dad who hates tuna kept sneaking them off my plate.
1 can Sirena Dill Infused Tuna (do not remove the oil)
1 medium sized potato boiled and mashed roughly
1/3 cup chopped parsley
1/2 cup plain flour
1/2 cup maize flour
1/2 cup corn flakes crushed
2 eggs whisked
1. In a bowl mix the tuna, potato and parsley.
2. Shape into batons and put into the freezer for 30 minutes to firm up.
3. Dust the batons in flour, egg and then the maize and corn flake mixture.
4. Fry in vegetable oil until golden.
Serve immediately with lemon wedges; oh and help me figure out some recipes for the cans of Sirena tuna infused with rosemary or basil.
