After a week or so of my dear flatmate, Leonie, talking non-stop about cake (‘I really wanted tiramisu at 1am the other morning and couldn’t find any’, ‘I have such a craving for cake at the moment’, ‘Are you making any sweet food for your blog?’, ‘I really feel like chocolate…or cake…’, ‘I went to a restaurant the other night, purely for their tiramisu, and it wasn’t on the menu, waaahhhh’) and after a week of ignoring her comments/changing the subject, I finally realised she REALLY, REALLY wanted cake…or chocolate…or dessert…or anything, really…
Here’s a recipe for Booze with Tiramisu (she’s also a healthy drinker)
1 cup strong black espresso
1/2 cup marsala
1/2 cup Bailey’s (optional, and not very traditional, but more booze = more joy, so why the hell not?)
2 eggs, separated
1/4 cup brown sugar
Savoiardi (italian sponge biscuits)
Grated dark chocolate and whipped cream to serve
Combine the coffee and marsala. Set aside to cool.
With an electric beater, beat the egg yolks and sugar until thick and creamy. Add the mascarpone and Bailey’s and mix until combined.
Beat the egg whites until soft peaks form. Using a metal spoon, fold through the mascarpone mixture.
Dip the sponge fingers in the coffee and line the base of your serving bowl, or individual glasses. Drizzle with remaining coffee.
Pile on the mascarpone, cover with glad wrap and refrigerate until set.
Sprinkle with lots of grated dark chocolate and a dollop of whipped cream (fuck it, it’s loaded with fat any way). Enjoy with a nice strong coffee! Or any remaining Bailey’s…
